Before going to Ghana, I knew I had to try jollof rice because there is so much hype surrounding it, and I just had to see what the hype was about. Anywhere we went to eat, there was jollof rice on the menu, so the first day we arrived, I ordered it with chicken. I don’t know what it is, but this was the best rice I had the entire trip. The rice was packed with flavor and spice, and you can pretty much have it with any protein you want. A couple of times, I ordered it with fish, and they served the entire fish! Pictured in the first two images is the rice with beef kebab and red snapper. The third photo is of pineapple and ginger juice. Just like the rice, anywhere we went, there were variations of pineapple juice on the menu. My favorite was pineapple ginger. It’s super sweet at first, then suddenly the ginger punches you in the back of your throat, but it is so refreshing. The juice was always squeezed on the spot with no unnecessary additives; it was so fresh. The final photo is of a meal we shared at our accommodations. We had red red, which is a bean stew with white rice and plantain. This was my absolute favorite meal I had in Ghana. The beans were savory, and the plantain was sweet, so it made the perfect pair! It was so delicious, I asked Mrs. Lucy to write me her recipe so I can make it at home. Overall, I had such an amazing experience with the food. 100000000/10!
